Bacon Jalapeño Chicken Tenders

I love to cook  and cooking in the RV can be no different than cooking in a house.  Always keep an open mind and experiment with flavors!

Bacon Jalapeño Chicken Tenders

Although this was whipped up last minute while in the camper, using ingredients already in the refrigerator, I have substituted different types of mushrooms at other times and it has come out as great as the original.

2 lbs chicken tenders

6 thick slices bacon

6 large jalapeños, veined, seeded & sliced in strips

2 cups sliced shiitake mushrooms

1 bunch green onions chopped

1 1/2 cups shredded mozzarella cheese

1 1/2 cups shredded sharp cheddar cheese

In large pan:

Cook bacon until firm but not crispy.  Remove to paper towel.

Sauté chicken tenders in bacon grease on high heat until no longer pink.  Remove to paper towel to drain.

Sauté mushrooms & jalapeños in remaining bacon grease (add Tablespoon or 2 of butter to scraps if used up) on medium heat until tender but not soggy.  Top with cooked chicken tenders, cheeses, bacon & green onions in that order.

Cover and cook on medium for a few minutes until cheeses melt.
